oats pav bhaji

For Pav: Ingredients
  • -Oats 1 Cup
  • -Sooji 1 Cup
  • -Buttermilk 1 Cup
  • -Salt 1 0
  • -Cumin seeds 1 Teaspoons
  • -Ginger(chopped) 1/2 Teaspoons
  • -Carrot(grated) 1 Cup
  • -Beans 1 Cup
  • -Green chillies 2 Numbers
  • -Onion 1 Cup
  • -Oil 2 Teaspoons
  • -2tablespoons unsalted butter
  • -1/2 cup whole milk
  • -3/4 cup water
  • -3 teaspoons instant dry yeast
  • -2 tablespoons honey or pwd sugar
  • -1 cup whole wheat flour
  • -1 cup oat flour
  • -1 1/2 cups all-purpose flour
  • -1 teaspoon  salt
  • -1/4 cup milk
  • - Oats, for sprinkling
For oats bhaji
  • -1small onion chopped finely
  • -1/2 tsp ginger, minced
  • -1/2 minced garlic
  • -2 green chillies chopped
  • -1/2 cup plain oats
  • -1 bell pepper, finely chopped
  • -2 tomatoes, finely chopped
  • -1/4 cup each of these vegetables, finely diced and boiled: green beans, carrots, cauliflower
  • -2 tsp pav bhaji masala
  • -1 tsp red chili powder
  • -1/4 tsp turmeric powder
  • -Salt to taste
  • -1/2 tsp lemon juice
  • 2 Oat buns (called pavs)
  • -In a small saucepan combine the soft butter, milk, and water. Set over low heat until the butter is melt or just warm to the touch. Stir in the yeast and honey.
  • -In the bowl, combine the whole wheat flour, quaker oat flour, all-purpose flour, and salt. Add the milk mixture and stir until combined. Knead, until the dough comes together in a smooth, elastic, and slightly sticky ball. If the dough is unbearably sticky, add more flour 1 tablespoon at a time. Avoid adding extra flour if possible, sticky is better than dense.
  • -Remove the dough to a well-oiled bowl, turning to coat completely in oil. Cover with plastic wrap and let rise until doubled in size, about 1 hour.
  • -Turn the dough out onto a floured work surface and divide into the 9 rolls. Form each piece into a smooth tight ball by stretching the corners around the bottom and rolling between your palm and the counter.
  • Grease an 8 by 8-inch baking dish. Place each ball of dough in the dish and cover with plastic wrap or a muslin cloth. Let rise again until puffy, about 30 minutes.
  • -Meanwhile, preheat the oven to 180°C.
  • Take 1/4 cup of milk and brush over the rolls. Sprinkle with oats. Bake the rolls for about 10 to 15 minutes, or until golden. Serve with Oats bhaji
RECIPE: For Oats bhaji
  • Heat oil in a pan. Add onions, ginger, garlic, and green chillies and sauté till golden brown. Add boiled vegetables, Quaker oats and stir.
  • Stir in the pav bhaji masala, turmeric, tomatoes, capsicum and salt. Add green chillies and water and mix it well. Cook for 4-5 minutes.
  • Add lemon juice and serve with Oat toasted buns.
